A rich tasting soup without any cream!

serves 4

2 T butter

1 small onion chopped

4 cloves garlic minced

1 T dried tarragon

1 t dried thyme

1 t dried basil

3/4 c  dry white wine

1 potato peeled and chopped

2 larger sized broccoli heads cut into 1 in florets

5 cups organic chicken broth (I like Better Than Bouillon from Common Market/MOM's)

salt to taste

Heat butter over medium heat add onion and let soften over medium/low heat for 5-8 minutes. Add garlic and cook another 2-3 minutes.    Add the dried herbs and stir until fragrant, 1 more minute.  Increase the heat to medium/high and add wine, let wine reduce for 2 minutes.  Add the potato, broccoli and chicken broth.  Cover, bring to a boil and then reduce heat to a simmer for 25 minutes.  Puree in pan with an emulsion blender or blend in batches and return to pan to heat through.

I love to serve this over quinoa and sliced scallions for a filling meal.
