serves 4-6

3 T olive oil
2 T unsalted butter
1 onion chopped
8 cloves garlic minced
2 carrots chopped
2 stalks of celery chopped
3/4 c + 4 T dry white wine
1 c brown rice rinsed
42 oz organic chicken broth or vegetable broth
2 1/5 c water
2 cans (15 oz each) organic cannellini beans liquid drained
1 t salt
1 bunch of lacinato kale, white stems removed and chopped
2 T each of fresh thyme and oregano (can use other fresh herbs, sage, rosemary)

Heat oil and butter over medium heat in large pot until foam subsides then add onion, garlic, carrots, and celery, stirring occasionally until vegetables are soft, about 15 minutes.  Add 3/4 c white wine and let reduce for 2 minutes.  Add brown rice, broth, water, beans, and salt, bring to a boil and then reduce heat to a gentle simmer for 45-55 minutes or until rice is soft.  Add  kale, thyme, oregano, and 4 T white wine, let simmer 10 more minutes.  Season with salt and pepper.
