This can be a substitute for so many recipes which use dairy, from whipped cream to enchilada sauce.



2 cups of raw cashews (whole or pieces)

water to cover

  1. Place cashews in a bowl and cover with water.  Let them soak from as little as 2 1/2 hours to overnight. Longer produces a creamier result.
  2.  Strain and discard the water.  Place cashews in a blender and add enough water to just cover them.  Blend.
  3. If you are making this for enchiladas then use 1 cup of the cream and add 1 T lime juice.
  4. If you are making this for a dessert add enough honey or maple syrup to taste.
