A quick easy high fiber and high protein grain


1 T olive oil

1 c quinoa rinsed

2 c water

2 scallions, white and light green parts finely sliced



Heat olive oil over medium/high heat and add quinoa.  Stir until fragrant 1-2 minutes.  Add water, cover and bring to a boil.  Reduce heat to a simmer for 20 minutes.  Turn off heat, mix in scallions and let stand 5 minutes.  Salt to taste.
