This granola is a great snack or breakfast with hemp, almond, or rice milk and fresh fruit.

 2/3 cup olive oil

2/3 cup 100% maple syrup

1 T vanilla

1 T cinnamon

1 t almond extract (optional)

1 t salt

6 cups rolled oats

3/4 cup raw almonds chopped

3/4 cup raw cashews

3/4 cup raw pecans chopped

chopped dried fruit (raisins, mango, pecans, papaya) to taste

 

Preheat oven to 325 degrees.  Mix first 6 ingredients together and lightly heat in a saucepan.  Pour over oats and nuts tossing thoroughly.   Spread mixture onto cookie sheet or baking pan and bake for 20-25 minutes, stirring granola occasionally, until evenly toasted.  Let cool and then toss in remaining ingredients.  Store in a closed glass container.

You can also add the nuts after the oats have cooled if you prefer to eat them raw.
